Cabbage with Bacon, Apples and Cider

 
 

Ready in: 10 minutes

Serves 4-6

Serve with one of the Good Taste Foods Range of Meat or Fish steaks 

1lb (450g) green cabbage, quartered, with the core and stalk removed
4½  oz (125g) chopped bacon or cubed Pancetta
1 large apple, cored and chopped
2 tblspoons strong dry cider
2 tblspoons cider vinegar
1 dessertspoon olive oil
1 small onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
1 fresh or dried bay leaf
1 sprig fresh thyme
salt and freshly ground pepper

You will need a deep frying pan

 

1. Shred the cabbage into 5mm pieces
2. Place the frying pan over direct heat and fry the bacon or pancetta until crisp and brown and remove it onto a plate
3. Add oil to the pan and when hot fry the onions until golden brown
4. Add the cabbage, stirring continuously for 3 minutes, then return the bacon to the pan and add the apple, garlic, bay leaf, thyme and seasoning.
5. Toss for a few seconds then add the cider and cider vinegar and continue to cook for 1-2minutes.
6. Remove the bay leaf and thyme, season and serve with one of the Good Taste Foods Range of Meat or Fish steaks.
