Coley can be used like cod or haddock, it’s slightly darker in colour but a much underated fish and very sustainable.

Cooking: Cook coley the same way as you would cook cod. It’s easy to pan fry with a little olive oil, why not use in a fish pie with some of our Norwegian salmon and smoked fish.
