Mixed Fish Stew with Wine and Herbs

 

Ready in: 20 minutes

Serves 6-8 

8 fillets of Good Taste Food fish; options of Skate, Sole, Cod, Haddock, Hake, or John Dory. Use a selection of these fish, in equal quantities.

50g sprig parsley

1 garlic head, cloves separated, lightly crushed, but not peeled

3 quarters of a litre of dry white wine

Quarter litre of water

Salt and pepper

1 bouquet garni

2 tablespoons lemon juice

50g butter      

2 lemons, quartered

 

  1. Put the garlic and parsley at the bottom of a large pan, add the fish, pour in the wine and water and season.

  2. Add the bouquet garni.

  3. Bring rapidly to the boil and cook over a high heat for 10 minutes, or until the fish is nearly done.

  4. Add the lemon juice and half the butter

  5. Cook for 3-4 more minutes or until all the fish is done.

  6. Put the remaining butter into a warmed deep serving dish and serve with the lemon.
