Mixed Fish Stew with Wine and Herbs
Ready in: 20 minutesServes 6-88 fillets of Good Taste Food fish; options of Skate, Sole, Cod, Haddock, Hake, or John Dory. Use a selection of these fish, in equal quantities.50g sprig parsley1 garlic head, cloves separated, lightly crushed, but not peeled3 quarters of a litre of dry white wineQuarter litre of waterSalt and pepper1 bouquet garni2 tablespoons lemon juice50g butter2 lemons, quartered |

Put the garlic and parsley at the bottom of a large pan, add the fish, pour in the wine and water and season.

Add the bouquet garni.

Bring rapidly to the boil and cook over a high heat for 10 minutes, or until the fish is nearly done.

Add the lemon juice and half the butter

Cook for 3-4 more minutes or until all the fish is done.

Put the remaining butter into a warmed deep serving dish and serve with the lemon.
