Fish with Walnut Sauce

 

 

Ready in: 40 minutes

Serves 4-6

Using one of Good Taste Foods range of steaks or fillets of Cod, Hake, Barramundi, Haddock  Mahi Mahi or Turbot available from our fish selection.

4 portions of fish
2 bay leaves
8 peppercorns
100g walnuts, shelled
2 to 4 garlic cloves
Paprika
Salt
1 teaspoon ground coriander seeds
3 to 4 small onions, finely chopped
1 tspoon ground cinnamon
Quarter teaspoon ground cloves
Freshly ground black pepper
6 tblspoon vinegar or pomegranate or grape juice

1. Cut the fish into portion-sized pieces.
2. Put the fish into a pan with the bay leaves, peppercorns, and just enough salted water to cover. Simmer for 12-15 minutes
3. Remove the fish from the pan and put it in a serving dish. Leave to cool and reserve the cooking liquid
4. Pound the walnuts together with the garlic, paprika and salt to taste. Add the coriander and mix well
5. Dilute the mixture with the cooking liquid until the consistency of single cream.
6. Pour the sauce into the pan, add the onions and simmer, uncovered for 10minutes.
7. Mix the cinnamon, cloves and pepper with the vinegar or pomegranate juice and add this mixture to the sauce. Continue to cook for 10 more minutes.
8. Pour the hot sauce over the fish, leave to cool slightly, then serve with seasoned mashed potatoes and green beans.
