Sardines Grilled in Vine Leaves

Serves 3-4

12 Good Taste Foods sardines (defrosted)You can also use Turbot or Mackerel for this recipe availables from our Cornish Gold Fish Selection
4 tablespoons olive oil
2 tablespoons lemon juice
Salt and pepper
2/4 sprigs fresh rosemary cut in sections
12 well-shaped large vine leaves

 

1. Mix the oil, lemon juice, salt and pepper in a dish
2. Roll the sardines in the mixture and put a little rosemary inside each one
3. Wrap each fish in a vine leaf, using the stalk to secure it
4. Grill or barbeque for 3/4 minutes on each side or until leaves start to blacken
5. Serve straight away - delicious with a crisp green salad and crusty bread
