Jambalaya of Chicken recipe

Ready in: 1hr15Serves 44 Good Taste Food Chicken Breasts3 medium-sized onions2-3 carrots,1 bouquet garni1 stick celery4 garlic clovesHalf litre each of dry white wine and waterSalt and pepper250g long-grain rice washed and drained1 tablespoon olive oilQuarter teaspoon ground saffron |

Place the chicken in a dish

Pour over the wine and water to cover

Add seasoning, bring slowly to boil and skim

Cook at a simmer until done (1 hour)

Towards the end of cooking, fry the rice gently in the oil and add the saffron. When the rice turns opaque, add half a litre of the degreased liquid from the dish

Cook the rice, covered for about 18 minutes over a low heat, or until done.

Serve with the rice for a fantastic chicken dish.
