Jambalaya of Chicken recipe

 Chicken Recipe

Serves 4

4 Good Taste Food Chicken Breasts

3 medium-sized onions

2-3 carrots,

1 bouquet garni

1 stick celery

4 garlic cloves

Half litre each of dry white wine and water

Salt and pepper

250g long-grain rice washed and drained

1 tablespoon olive oil

Quarter teaspoon ground saffron

  1. Place the chicken in a dish

  2. Pour over the wine and water to cover

  3. Add seasoning, bring slowly to boil and skim

  4. Cook at a simmer until done (1 hour)

  5. Towards the end of cooking, fry the rice gently in the oil and add the saffron. When the rice turns opaque, add half a litre of the degreased liquid from the dish

  6. Cook the rice, covered for about 18 minutes over a low heat, or until done.

  7. Serve with the rice for a fantastic chicken dish.
