Orange glazed salmon fillets with summer salsa

Serves 4

4 Good Taste Foods wild salmon fillets

3 oranges

15ml (1tbsp) soy sauce

½ cucumber

½ red onion

15ml (1tbsp) fresh mint

 

1.  Grate the rind from one of the oranges and place in a bowl.  Cut away the peel and pith and segment all the oranges.  Place the segments in a separate bowl from the rind.  Squeeze any juice into the grated rind and add the soy sauce.  Place the salmon fillets into this bowl and leave to marinate for 20 minutes

2.  Cut the cucumber into small cubes.  Halve and finely slice the onion and chop the mint.  Mix in with the orange segments.

Griddle, pan fry or barbeque the salmon for about 10-15 minutes depending on the thickness.  Turn halfway through cooking.  The fish will look opaque and flake easily when cooked.  Serve on a bed of the salsa with new potatoes.
