Oven-Roasted Winter Vegetables

 

 

Ready in: 30-40 minutes

Serves 6 

This is a great addition to any of the Good Taste Food Range. Use roasted chicken or duck portions, pork fillet, lamb chumps or fish fillets or steaks to make a warming hearty meal. All can be cooked from frozen in the oven whilst the vegetables are cooking.

12 shallots peeled and halved
12oz Carrots peeled
12oz (350g) peeled and deseeded butternut squash
12oz (350g) peeled sweet potato
12oz (350g) peeled swede
12oz (350g) peeled celeriac
1 tablespoon freshly chopped mixed herbs
2 large cloves garlic, peeled and crushed
3 tablespoons olive oil
salt and pepper

You will also need a baking tray or pyrex dish (approx11 x 16inches)


1. Preheat the oven to gas mark 7 (220 degrees Celcius)
2. Cut the vegetables into large chunky pieces
3. Place in a large bowl and add the herbs, garlic, olive oil and lots of seasoning. Use your hands to mix
4. Spread the vegetables out on the baking tray and cook on the top shelf for 30-40 minutes until they’re tending and browning
