Roasted Butterflied Tiger Prawns in Garlic Butter

Serves 4 

Works well as a starter or a main course.  Use any of the Good Taste Foods Tiger Prawns, Gambas, Crevettes, easy peel or peeled King Prawns for this recipe or alternatively use the Good Taste Food Garlic Prawns available from our shellfish section. Just follow the recipe below just combining the remaining ingredients and spreading over the prawns before placing on the baking tray -  This recipe is for a starter

20 raw, shell-on large prawns (about 1lb 8oz/700g)

4 Cloves of Garlic, peeled and crushed

3oz butter softened

1 heaped tablespoon chopped, fresh parsley

Grated zest and juice half lemon

Use a large gratin dish, individual gratin dishes or a baking tray, buttered

1. Pull off the heads and legs of the prawns then peel the shells. Leave the tails attached.
2. Turn each prawn on its back and make a cut down the centre of each prawn, but do not cut through.
3. Ease open the prawn and remove the brownish-black thread
4. Rinse the prawns and pat dry
5. Arrange attractively in the chosen dish
6. Make the garlic butter by combining all the remaining ingredients in a small bowl.
7. Spread garlic butter equally over the prawns, clingfilm and chill until needed
8. Preheat the oven to gas mark 8, 230 degrees celsius, remove the clingfilm, then place on the highest shelf, then let them cook for 6-7 minutes

Delicious served with hunks of fresh bread and olives as a starter.
