Steamed Spring rolls with Lime and Ginger Dipping Sauce 

Ready in: 25 minutes

Serves 4

16 Good Taste Foods King Prawns cooked and shelled

8 spring roll wrappers

4 spring onions, sliced

Quarter cucumber, peeled and sliced

Small red pepper, finely sliced

Handful of sugar-snap peas

2 tablespoons chopped fresh coriander

1 tablespoon rices wine vineger

Lettuce leaves to line steamer

For the Sauce:

2 tablespoons swet chilli sauce

4 tablespoons soy sauce

Finely grated zest and juice of 1 lime

1 small piece fresh root ginger, peeled and grated 

1.) Lay out the spring rolls on a clean work surface. In a mixing bowl, combine the spring onions, cucumber, pepper, sugar snaps, king prawns, coriander and vinegar. season with salt and pepper.

2.) Share the mixture between the wrappers and roll them up tightly, folding in one side to secure the filling

3.) PLace the spring rolls on a steaming rack lined with lettuce leaves, or a pan or wokhalf filled with water. Bring to the boil then steam for 4-5 minutes, until the wrappers are just cooked through and the vegetables still crunchy.

4.) Make the dipping sauce by combining all the ingredients in a bowl. Serve with the spring rolls.
