Stir-Fried Butternut Squash With Prawns

Serves 4

20 Good Taste Food Tiger Prawns

2  tablespoons fish sauce

1 medium onion, sliced

2 cloves of garlic, crushed

1 teaspoon sugar

400g butternut squash, cut into chunks

2 spring onions, diagonally sliced

1.) For a tasty shellfish recipe,  bring a pan of slightly salted water to the boil and cook the butternut squash for 6-8 minutes until just tender. Drain and refresh under cold running water. Set aside.

2.) Season the prawns with half tablespoon fish sauce and set aside. Heat some vegetable oil in a wok or frying pan and then add the onion. Cook for 2-3 minutes until softened then add the garlic and cook for a further 2 minutes.

3.) Add the prawns and cook, stirring over a medium to high heat, until they turn opaque and have a nice golden colour. Throw in the squash with the remaining fish sauce and sugar, reduce the heat and cook for 2-3 minutes. Stir in the spring onion and serve immediately with rice on the side.
