Serves 2-4
2 Good Taste Foods chicken breasts (for four people you may prefer one each)
Grated zest and juice of 1 large lime
5fl oz (150ml) tinned coconut milk
1 dessertspoon olive oil
1 green chilli, deseeded and finely chopped
1 dessertspoon Thai fish sauce
4 heaped tblspoons fresh coriander leaves
4 spring onions, cut into 1inch pieces include the green stem
Defrost the chicken, chop into pieces and cover with the lime zest and juice. Leave to marinate until ready to use. |
