Stir-Fried Chicken with Lime and Coconut

Ready in: 1 hour to marinade, 8 minutes to cook

Serves 2-4 

2 Good Taste Foods chicken breasts (for four people you may prefer one each)
Grated zest and juice of 1 large lime
5fl oz (150ml) tinned coconut milk
1 dessertspoon olive oil
1 green chilli, deseeded and finely chopped
1 dessertspoon Thai fish sauce
 4 heaped tblspoons fresh coriander leaves
4 spring onions, cut into 1inch pieces include the green stem

Defrost the chicken, chop into pieces and cover with the lime zest and juice. Leave to marinate until ready to use.

Great cooked in a wok
1. Chop the chicken into bite-sized pieces and place in the bowl with the lime juice and zest, stir and leave to marinate for an hour or longer
2. Heat the oil and cook the chicken on a high heat for 3-4minutes until golden.
3. Add the chilli, stir-fry for 1 minute, then add the coconut milk, fish sauce, half the coriander and the spring onions
4. Cook for another 1-2minutes then serve with Good Taste Foods Vegetable rice with the remaining coriander and spring onions sprinkled over.
