Quick Tartare Sauce

 

Ready in: 10 minutes

Brilliant served alongside all baked, grilled or fried fish

1 large egg
Half teaspoon sea salt
1 small clove garlic peeled
Half teaspoon mustard powder
6 fl oz (175ml) light olive oil
1 tblspoon lemon juice
1½  tblspoons fresh flat-leaf parsley
1 heaped tablespoon salted capers, rinsed and drained
4 cornichons (baby gherkins)
freshly groundblack pepper 


1. Break the egg into the bowl of a processor, add the salt, garlic, and mustard powder and turn the processor on.
2. While processing, slowly dribble in the oil
3. When the sauce has thickened, add some pepper and all the other ingredients, then pulse until the ingredients are chopped
4. Taste to check seasoning – store in an airtight container in the fridge
