Turbot with Leeks and Black Olives

 

Ready in: 25 minutes

Serves 4

4 Good Taste Foods fish steaks. Options of Whole North Sea Turbot, Marlin Steaks, Halibut Steaks or Swordfish Loin 

2 tablespoons olive oil

60g butter

4 leeks, white and green parts, thinly sliced

8 large black olives, stoned and chopped

2 tablespoons white wine

60cl (1 pint) water

Salt and Black Pepper

2 tablespoons chopped parsley

  1. Heat the oil and butter in a shallow, heavy pan that will accommodate the fish steaks

  2. Add the leeks and olives and cook until soft

  3. Add the wine and water, season and stir well.

  4. Add the fish and simmer gently for 10 minutes. Regularly baste the parts of the steak that are not covered

  5. Turn the steaks over and repeat for a further 10 minutes.

  6. Remove the steaks and keep warm. Boil the remaining contents of the pan for half a minute. Pour the sauce over the steaks and serve.
